Fermented Barley: A Buyer’s Guide

At Oriental Specialty we produce our Fermented Barley using specially selected microorganisms to develop a distinctive fermented flavour profile. The product combines fermented barley grains with a dark, flavour-rich brine, providing versatility across a range of food manufacturing and foodservice applications.

The fermented grains contribute a malty, savoury character and texture, while the accompanying liquor provides concentrated fermented flavour, colour and acidity. Formulations can incorporate both components to meet the requirements of the finished product.

PRODUCT DEVELOPMENT

Fermented barley grains are suitable for stews, braised dishes, sauces, baked goods, marinades, and prepared foods. As they soften during processing, they add malty, savoury flavour, texture, and body.

The dark fermented liquor can be added to marinades, sauces, gravies, and glazes, providing deep colour, fermented flavour, and a distinctive malty-sour note. It also serves as a liquid ingredient in formulations that require extra seasoning, acidity, and flavour complexity.

Using both grains and liquor enables manufacturers to create products with enhanced flavour and texture while utilizing the entire ingredient.
